I’m delighted this month to be hosting the Extra Veg challenge for Helen of Fuss Free Flavours and Michelle of Utterly Scrummy. We all know that eating plenty of vegetables is good for us but sometimes it’s not that easy to do so Helen and Michelle came up with this challenge to get us all thinking about how we can add an extra portion of vegetables to a meal. Since this challenge has been running, I’m now more conscious of working out how I can get an extra potion of veggies into a meal, especially as I live with a committed carnivore who has to be gently persuaded that veggies are a good idea. My favourite way of getting more vegetables in is to add a couple of big handfuls of spinach or kale to anything with a sauce, whether it’s bolognese, a casserole or a curry, quick and easy to do and I know we’re getting a good dose of vitamins from our leafy greens.
To join in with the August challenge all you need to do is blog about any recipe or idea where you eat an extra portion of vegetables.
