Summer is well and truly here now and today I’ve teamed up with Thebar.com to show you how easy it is to mix up a fruity cocktail at home without any special equipment. Did you know that cocktails are now more popular than they were 5 years ago with over a third of us in the UK choosing cocktails over beer or wine when going out for a drink. I used to drink lager or cider in the pub but nowadays I’m more likely to choose a cocktail instead. Our choice of favourite cocktail varies depending on where we live, with southerners like myself favouring Pimms and lemonade, G&T and vodka & cranberry. Sometimes there’s nothing better than a simple fruity vodka based cocktail to enjoy on a hot evening so I’ve decided to recreate the Smirnoff Raspberry Collins from Thebar.com.

It’s very easy to make this cocktail, all you need are fresh raspberries, ice cubes, lemon juice, sugar syrup, vodka and a dash of soda water. You don’t even need a cocktail shaker, a clean empty jam jar will do so you can shake things up at home without any fuss.

Top tip from the Cocktail Crashers Tom & Frankie,  if you don’t have any sugar syrup and don’t want to make any is to use squeezy honey instead, which is exactly what I did, or you could use a couple of teaspoons of sugar.

Serves: 1
  • 50ml Smirnoff No. 21® Vodka
  • 9 Raspberries
  • 25ml Lemon Juice
  • 10ml Sugar Syrup
  • 1 dash Soda Water
  1. Muddle raspberries in the base of a shaker.
  2. Fill a shaker with ice.
  3. Pour Smirnoff No. 21 Vodka, lemon juice and sugar syrup into the shaker.
  4. Shake until cold.
  5. Strain into a Collins glass filled with ice.
  6. Top up with carbonated water and garnish with raspberry.

My boyfriend and I enjoyed our cocktails after work one evening. We both agreed this was very easy cocktail to make with a lovely refreshing fruity flavour from the fresh raspberries. A great way to unwind after work and have a bit of fun in the kitchen at the same time.

    Collins style cocktails are so easy to make at home, you’re absolutely right. For me it’s all about the Tom Collins, but I love the idea of a Raspberry Collins with fresh fruit – perfect in summer!
